Closer to Claus Then Thee!

The Hilton Singapore is really making it a northern Christmas this year, as Checker’s Brasserie collaborates with Hong Kong restaurant FINDS (one of our faves and famous for their quirky molecular cocktails) to churn out Nordic festive feasts. FINDS – which stands for Finland, Iceland, Norway, Denmark & Sweden (so des ne!) – is known for their yumms-laden Scandinavian food, created by cute culinarians, Exec Chef Jaakko Sorsa and Chef Petri Bystroff.

Chef Petri will be spending the Christmas season at the Hilton Singapore to churn out festive must-haves like the divine beetroot salmon gravadlax, smoked for four minutes, then lightly cooked in the oven to attain a delicate, to-die-for tenderness. Don’t miss the excellent reindeer mousse served with bread crisps  (I tried it and it was a real treat!) and hot smoked salmon with morel sauce. Glug some spiced Glogg – the Nordic version of mulled wine – and if you spot it on the dessert table, jump on the blackcurrant tea milk chocolate mousse with marinated berries. Sounds confused, but it’s a delicious, surprisingly traditional sweet up north. 

My picks for the Hilton Singapore’s Christmas offerings are the Christmas Eve buffet dinner at Checker’s Brasserie ($S148++ per person) featuring the Nordic nosh, spit roasted baby lamb and Wagyu beef leg, and Christmas Day Brunch (how else to wake up to Christmas?) at $158++ which also showcases in-house Exec Chef Sandro Falbo’s fabulous Mediterranean whole suckling pig and 24lb Christmas turkey.

Good to know: If you want to eat well but more gently, the Nordic fare at the Hilton Singapore continues for dinner only between 26 Dec and 30 Dec, featuring two- and three-course set menus at $38 and $48 respectively. Cheap! Back in Hong Kong, FINDS is located in the boutique hotel Luxe Manor.
