Sam Leong’s ‘Forest’ Opens Today!
You’ve done Santi, Emmanuel, David, Andre, Jason….and when you think you’ve tasted them all, here comes Sam. The slew of celeb restaurants hasn’t stopped here in Singers, so pop him down on your little black book as the Next New Thing.
Just announced, celeb chef Sam Leong, one of our brightest local stars and truly a creative soul in Asian cuisine, has burst forth on the restaurant scene again with his new baby Forest, in Resorts World Sentosa, which opens today. It’s located at the new Equarius Hotel.
Named after his Thai wife who is also a talented chef, this mod Chinese restaurant has got Sam stamped all over it, for he’s been involved in every aspect of its development. With this as his focus, stand back and expect to be wow-ed by his thoughtful, stylish cooking, where familiar flavours will be combined with novel ingredients and modern presentation. With his wife working the kitchen too, you’ll be seeing Thai influences woven into his cuisine here.
Says Sam the man himself: “Instead of the usual banquet-style service and presentation typical of a Chinese restaurant, I would encourage guests to go for the 8-course or 10-course Discovery Menu which is more tailored and challenges the senses for a multi-sensory dining experience.”
The 8-course Discovery menu is $180++ and 10-course Discovery menu is $250++.There’s also an a la carte menu too with prices starting from $15.
Designed by Australian-based Diana Simpson Design, the restaurant itself is inspired by rainforest trees, with a main centerpiece featuring a canopy of intertwined branches and leaves supported by four ‘tree columns’ made of light-coloured wood. What’s also unique here is the open-concept Chinese-style kitchen with nothing to separate the work and action from the customers. You can watch the chefs prepare their food or sit at the counters to get even closer to the action. And clearly, masterclasses are in the plans too, with the dedicated chef’s table plus built-in show kitchen.
