The Big Fat Mama Of All Brunches!

What’s biannual and biennial? The first means twice a year, the second means once every two years. Thank goodness The Ritz-Carlton, Millenia Singapore’s ‘SuperBrunch’ takes place biannually or we’d have a really long wait for the next big feast!

 

This ‘big fat mama’ of all brunches takes place noon to 3pm on Sunday, 16 October – which is, for a bit of historical trivia, the same date Marie Antoinette was beheaded during the French Revolution. Thank goodness no one is about to meet the same fate when they now say “Let them eat cake’ for the cakes at the brunch promises to be simply exquisite! This is because Chef Janice Wong (formerly of Methodist Girls’ School and currently of 2am:dessertbar) will be serving up her delicacies there, being one of the five local guest chefs who will be featured this time. The other four stars are Chef Diego Chiarini (OsO Ristorante), Chef Francois Mermilliod (Absinthe), Chef Patrick Heuberger (Le Bistrot Du Sommelier) and Chef Yong Bing Ngen (Majestic Restaurant) who will present a Miniature Dish that inspires him or her.

 

They will complement the colossal brunch spread laid out by the hotel’s Executive Chef Arnaud Thulliez and his team, comprising buffet ‘islands’ stretching from Chihuly Lounge to the Greenhouse Restaurant,  replete with a la minute stations, unlimited Champagne and live entertainment. 

 

Chef Heuberger will be serving  Tomato Jelly with Parmesan Cheese Espuma & Olive Crostini; Chef Chiarini will offer  Mediterranean Cannolo; Chef Yong is rolling out his 12-Hour Braised South African Abalone with White Truffle; Absinthe’s Chef Mermilliod has his Sautéed King Prawn with Chorizo, Pine Nuts & Watercress and Chef Wong, the Kayambe Chocolate Coral.

 

 

Beyond that, be ready to enjoy the seafood largesse (above) of oysters, poached lobsters, tiger prawns, scallops, sashimi, and home-made smoked salmon (lovely!); charcuterie all-sorts (below) including foie gras parfait, prune pate, Iberico and Serano ham, duck galantine and pork trotter vinaigrette; over 90 varieties of cheese from its formidable cheese borad, a whole wagyu beef leg with jus bourguignon, slow-roasted for 32 hours, roasted Iberico pork rack, and live a la minute foie gras station!

Like that’s not enough decadence, you also have dessert overdose (top) with  Chocolate fountain, mini brioche toasted with apple compote, Caribbean panna cota with midori sago and coffee cream with mascarpone mousse and Irish bailey. Bring your camera along, because the dessert presentation here is always outstanding – makes you feel like a kid in a candy store all over again! Wash all this largesse down with unlimited floods of Moët and Chandon Grand Vintage Rosé 2002 and Grand Vintage 2002, wines, cocktails, mocktails and juices.
